With the weather outside becoming increasingly more frightful, it’s easy to burrow away and take comfort indoors. But before you queue up the Netflix (Broadchurch marathon, anyone?), we’ve got just the thing to transform your nest into the paradigm of coziness. Brew a magically warming simmer pot that’ll steam away all day, filling your home with sweet spices and cleansing citrus to fight off the dreariness outside. Achieving dreamy ambience has never been easier.

The best part about simmer pots is the freedom to get wild. Choose any aromatic herbs and spices you have on hand, throw in a citrus peel or two, and you’ve got a custom blend of your very own.

Ingredients:

2 tablespoons whole cloves

2 teaspoons ground nutmeg

6 star anise pods

1 orange peel

6 bay leaves

How-to:

Fill a small pot half full with water, and bring to a boil. Add ingredients and turn heat down to low, allowing the pot to simmer all day. We recommend setting a timer to remind you that the simmer pot needs to be topped off with water about every 30 minutes.

Notes

- Hang onto apple, lemon, lime and orange peels to use for future simmer pots. They can be stored in an airtight container after they have dried out.

-For a lovely outdoorsy variation, add pine needles or bark to your simmer pot.

-Your simmer pot mixture can be reused and stored in the refrigerator for up to one week. Add water as needed.
